National Grilling Month - What is that Awesome Smell?
by Kim Green-Spangler

You're standing inside the hot kitchen and delightful smells are tantalizing your taste buds. Your mouth is watering due to the smells wafting into your kitchen through the open window. Is that grilled salmon you smell? A peer through the window shows a side of grilled tomatoes and asparagus, not only is it your favorite, but your recipe! Just when you're almost ready to jump through the screen onto the neighbor's deck Bob leans over the fence and asks if you'd like to join them for dinner because he was a little overzealous in his shopping. Whooping for joy you shut off the hot oven run a hand through your hair, and shout for the kids and your hubby to meet you next door. Yessiree! It's grilling season!

It's officially summertime and time to make sure the grill is clean, your utensils are brought out of storage and you take advantage of outdoor cooking for a much cooler house while enjoying fantastic, mouth-watering great taste. There's no better way to bring life to a boring hot dog, burger or steak, and no easier way to keep kitchen cleanup to a minimum during the hot summer months.

Besides the taste and versatility of outdoor grilling there are the flavorful marinades. Set the meat, fish, poultry or vegetable in the marinade of your choice for a few minutes/hours for a delightful change of pace. Marinating allows the "chef" to use slightly inferior cuts of meat to produce tender, juicy sinfully delicious dishes that are infused with ginger, teriyaki, herbs and spices, balsamic vinegar and more. If marinades aren't your thing - supermarket spice aisles have glorious displays of spices guaranteed to suit any palate just waiting to be shaken onto your food of choice.

All of the new grilling tools and grates make cooking on the grill even easier. Create perfectly grilled steaks, fish, and shrimp in grates specifically designed to create gorgeous grilled marks while keeping food safe from falling into the flames.

When it's time to put the outdoor grill away, don't despair. An indoor grill may be just the way to keep the longings for good summertime foods at bay. A portable indoor grill will help keep healthier eating at the forefront throughout the winter, and allow for some recipe experimentation so that they'll be perfected in time for next summer! So start shopping for bargains on indoor grills while everyone is still thinking outdoors.

So firing up the grill has more than just the obvious benefits. It offers healthier eating, an infusion of flavor, easier clean-up and a wonderful way to end a busy day. Oh, and it smells marvelous too!
