The Breast Health Cookbook: Fast and Simple Recipes to Reduce the Risk of Cancer by Robert Arnot, M.D., Barbara Sutherland, Ph.D. and Rita Mitchell, R.D.
Dr. Bob Arnot is also the author of The Breast Cancer Prevention Diet. His wife complained that the recommended foods in his breast cancer diet didn't taste good to her so he teamed up with two nutritionists to research and create flavorful menus that, not only his wife would eat, but the whole family would enjoy. This book is the product of that research.
Arnot begins by explaining how specific foods may help protect you from breast cancer. The information is not overly technical and is easy to read. He also briefly discusses planning for a change in your diet, cooking terms, and shopping for the foods needed in the recipes, which may be different from what you've cooked with previously.
Ingredients:
2 cups rolled oats
¼ cup packed soy protein powder
¼ cup nonfat dry milk powder
2 tablespoons sliced almonds
½ cup apple juice concentrate
2 tablespoons brown sugar
1 teaspoon canola oil
1/8 teaspoon salt
1 tablespoon chopped dried apricots
1 tablespoon raisins
1 ¼ cups nonfat soymilk
Preheat
oven to 250 degrees. In a large bowl, combine oats, soy protein
powder, milk powder, and almonds. In a small bowl, mix apple
juice concentrate, brown sugar, oil, and salt. Add juice mixture
to oat mix; stir until evenly moistened. Spread on a cookie
sheet. Bake in preheated oven for 45 minutes, stirring every
15 minutes to prevent burning. Mix in apricots and raisins.
Pour soymilk over cereal.
